These cookies remind me so much of my childhood. The delicious buttery cookie with baked gooey jam. Who needs anything more? Ok, maybe a drizzle of warm melted chocolate for an upgrade, but I love these just how they are! The entertaining part is applying your signature thumbprint. What fun!
You’ll Need:
1 cup confectioners’ sugar
1/2 unsalted butter at room temperature
1/2 teaspoon table salt
2 teaspoons good quality vanilla extract
1/2 teaspoon almond extract
2 cups all-purpose flour
1 1/4 cup of your favorite jam
Here’s How:
Step 1: Preheat the oven to 375′ F Degrees —line two baking sheets with parchment or silpat mats.
Step 2: In a large bowl, mix the sugar, butter, salt, and extracts until smooth. Mix in the flour.
Step 3: Scoop and roll the dough into 1-inch round balls and place them on the prepared baking sheets, leaving an inch of space between each cookie. With clean hands, press your thumb to make a small well to hold the jam. You can also use a measuring spoon if you prefer. Add a spoonful of your favorite jam.
Step 4: Bake the cookies for 8 to 10 minutes until their edges brown. Cool on the pan for 10 minutes before transferring to a rack to finish cooling completely.
Once cool, drizzle with warm chocolate if you like. Share!
